You will need

  • 3 cups crushed strawberries (about 3-1 lb containers)
  • 1-3/4 cups unsweetened cranberry-raspberry or apple juice

  • Up to 3 cups sugar, 1-1/2 cups granular no calorie sweetener, 3/4 to 1 cup honey

Directions

  1. Gradually whisk pectin into fruit juice until dissolved. Bring to a full rolling boil that cannot be stirred down, over medium-high heat, stirring frequently. Boil hard 1 minute, stirring constantly. Remove from heat.
  2. Immediately add prepared fruit into hot pectin mixture. Stir vigorously for 1 minute. Stir in your choice of sweetener.
  3. Ladle freezer jam into clean jars leaving a ½ inch headspace. Loosely apply lids and let jam stand in refrigerator until set, but no longer than 24 hours. Serve immediately, refrigerate up to 3 weeks or freeze up to 1 year.
