Just as it does when baking a cake, a higher altitude can affect your fresh preserving recipes. But we’ll make it easy for you. Just follow these charts to determine how to adjust your recipe for altitude.

For Boiling Water Processing

If you are boiling at an altitude higher than 1,000 feet above sea level, adjust boiling water processing time as indicated. 

Altitude Feet Increase Processing Time
  • 1,001- 3,000
  • 3,001- 6,000
  • 6,001- 8,000
  • 8,001-10,000
    		•  5 minutes
    10 minutes
    15 minutes
    20 minutes

     

     

    For Pressure Canning

    If you are boiling at an altitude higher than 1,000 feet above sea level, adjust pressure pounds as indicated.
