Greek Salad with Marinated Feta

Put together the perfect Greek salad at home! Combine fresh-cut veggies and herbs with a zesty Caper Lemon Vinaigrette, then finish off with a sprinkle of Marinated Feta for a fresh and creamy topper.

1 head romaine lettuce, washed then thinly sliced across the leaves

2 lbs large ripe cherry tomatoes, halved or quartered (or use regular tomatoes, cut into small chunks)

1 lb small seedless cucumbers, sliced in half lengthwise then sliced into ¼ inch half-rounds

1 small red onion, halved then thinly sliced

1 red pepper, thinly sliced

1 cup flat leaf parsley, roughly torn

½ cup mint leaves

½ cup fresh dill

4 oz or more of Caper Lemon Vinaigrette

7 oz feta from the jar of Marinated Feta

Toss tomatoes, cucumber, and red pepper with caper vinaigrette.

Scoop vegetables and vinaigrette out onto romaine lettuce in a large serving bowl. Top with torn herbs and chunks of marinated feta; toss lightly.

Serve with pita or crusty bread.
