Citrus Mint Cocktail & Mocktail

Sip on dazzling summer spritzes infused with sweet citrus syrup and fresh mint.

INGREDIENTS

For the Syrup: (*See note below for alternate syrup recipe)

1 orange (preferably organic)

1 lemon (preferably organic)

1 cup sugar

Water as needed

1 bunch mint, leaves removed (about 2 cups)

For the Drink:

Sparkling wine (optional)

Cocktail bitters (optional)

Club soda or sparkling water (optional)

Orange wheels and mint sprig for garnish

Wash the citrus thoroughly with soap and water. Use a peeler to remove the outer part of the skin of the peels and reserve. Juice the orange and lemon, then add water as needed to make 1 cup.

Add the juice, water mixture, and sugar to a small saucepan and bring to a simmer, stirring to dissolve the sugar. Turn off heat and turn over the reserved peels and mint leaves. Cover and let sit until cooled to room temperature. Strain the syrup and store in a jar.

To make your cocktail, add 2 to 3 tablespoons of the syrup to an ice-filled jar, adjusting for sweetness. Top with sparkling wine or choice of club soda or sparkling water, and add a couple dashes of bitters. Garnish with an orange wheel and sprig of mint and enjoy!

*Note, if you have reserved syrup from making the Candied Citrus Bites, you can use 2 tablespoons of that along with 2 tablespoons of orange juice. Muddle a few mint leaves in the bottom of your glass before topping with ice and sparking water or club soda, then garnish.
