Caper Lemon Vinaigrette

This bright and creamy Caper Lemon Vinaigrette brings a burst of tangy flavor to Greek salads and also works as the perfect light marinade for chicken.

1 Half Pint Jar (8oz)

INGREDIENTS

1/2 cup (4 oz) extra virgin olive oil

5 tbsp white wine vinegar

2 tbsp lemon juice

1 tsp lemon zest

1/2 tsp dijon mustard

1 tbsp capers, drained and chopped

1 clove garlic, minced

Salt and pepper to taste

Combine all ingredients in a small bowl and whisk to blend. Pour into an 8 oz jar. Store in refrigerator. Shake before using.
